Ingredients

Units Scale
  • 1 (13 oz) bag tortilla chips
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/2 red onion, finely diced
  • 1 jalapeño, thinly sliced (optional)
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1/2 cup sour cream or Mexican crema
  • 1/2 cup salsa or pico de gallo
  • 1 lime, cut into wedges

Instructions

  • Preheat oven to 400°F (200°C).
  • In a skillet, cook ground meat over medium heat until browned. Drain excess fat.
  • Add taco seasoning and water, stir and simmer until thickened, about 5 minutes.
  • On a large sheet pan, spread half the tortilla chips. Top with half the meat, beans, corn, onions, jalapeños, and cheese. Repeat with a second layer.
  • Bake for 8–10 minutes, or until cheese is melted and bubbly.
  • Remove from oven and top with diced avocado, sour cream, salsa, and cilantro.
  • Serve immediately with lime wedges on the side.

Notes

  • Swap ground meat for shredded chicken or a plant-based crumble.
  • Add pickled onions, olives, or hot sauce for extra flair.
  • Best enjoyed fresh but can be reheated under the broiler.
