- 1 1/2 lbs potatoes, diced (Yukon gold or russet)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 1/2 lbs boneless chicken breasts or thighs, cubed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, sliced
- Optional toppings: sour cream, extra cheese, chopped parsley
Instructions
- Preheat Oven:
- Preheat to 400°F (200°C). Lightly grease a 9×13″ casserole dish.
- Roast Potatoes:
- In a bowl, toss diced potatoes with olive oil, paprika, salt, and pepper. Spread in the baking dish and roast for 25–30 minutes until golden and slightly crispy.
- Season Chicken:
- While potatoes roast, toss chicken with garlic powder, onion powder, salt, and pepper.
- Combine & Bake:
- Remove dish from oven. Top roasted potatoes with seasoned chicken, half the bacon, and half the cheese. Return to oven and bake for 20–25 minutes, until chicken is fully cooked.
- Top & Melt:
- Sprinkle remaining cheese and bacon over the top. Bake another 5 minutes until cheese melts.
- Garnish & Serve:
- Top with green onions and serve with a dollop of sour cream or your favorite loaded toppings.
Notes
- Use pre-cooked or rotisserie chicken for a shortcut.
- Add broccoli or bell peppers for a veggie boost.
- Can be made ahead and reheated!
