Description

This Lemon Vinaigrette Dressing is a light, tangy, and vibrant blend of fresh lemon juice, olive oil, and herbs. It’s perfect for salads, roasted veggies, or as a marinade for grilled meats and seafood.

Ingredients

Units Scale
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • 1 garlic clove, finely minced or grated
  • Salt and pepper, to taste
  • Optional: 1 tablespoon fresh herbs (parsley, dill, or basil)

Instructions

  • In a small bowl or jar, whisk together the lemon juice, Dijon mustard, honey (if using), and minced garlic.
  • Slowly pour in the olive oil while whisking constantly until the dressing is emulsified and smooth.
  • Season with salt and pepper to taste.
  • Stir in chopped herbs if using.
  • Store in a sealed container in the refrigerator for up to 1 week. Shake or stir before each use.

Notes

  • Use shallots instead of garlic for a milder flavor.
  • Add a splash of white or red wine vinegar for extra tang.
  • Blend in Greek yogurt for a creamy version.
