Description

  • For the Chicken:
  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Vegetables:
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For Garnish:
  • Fresh parsley, chopped
  • Lemon slices

Instructions

  • Marinate the Chicken:
  • In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper.
  • Add the chicken and coat evenly. Marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
  • Preheat & Prepare the Vegetables:
  • Preheat oven to 400°F (200°C).
  • In a baking dish, toss potatoes with olive oil, garlic powder, salt, and black pepper.
  • Spread them out in a single layer and bake for 15 minutes.
  • Add Chicken & Green Beans:
  • Remove the baking dish from the oven.
  • Push the potatoes to one side and place the chicken and green beans on the other side.
  • Drizzle remaining marinade over the chicken.
  • Bake Until Done:
  • Return to the oven and bake for 20–25 minutes (or until the chicken reaches 165°F / 75°C internal temp).
  • For a golden finish, broil for 2–3 minutes at the end.
  • Serve & Enjoy:
  • Garnish with fresh parsley and lemon slices.
  • Serve warm with extra lemon juice if desired.

  • Swap green beans for asparagus or broccoli.
