- For the Chicken:
- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 3 tbsp lemon juice (freshly squeezed)
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Vegetables:
- 2 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- For Garnish:
- Fresh parsley, chopped
- Lemon slices
Instructions
- Marinate the Chicken:
- In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper.
- Add the chicken and coat evenly. Marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
- Preheat & Prepare the Vegetables:
- Preheat oven to 400°F (200°C).
- In a baking dish, toss potatoes with olive oil, garlic powder, salt, and black pepper.
- Spread them out in a single layer and bake for 15 minutes.
- Add Chicken & Green Beans:
- Remove the baking dish from the oven.
- Push the potatoes to one side and place the chicken and green beans on the other side.
- Drizzle remaining marinade over the chicken.
- Bake Until Done:
- Return to the oven and bake for 20–25 minutes (or until the chicken reaches 165°F / 75°C internal temp).
- For a golden finish, broil for 2–3 minutes at the end.
- Serve & Enjoy:
- Garnish with fresh parsley and lemon slices.
- Serve warm with extra lemon juice if desired.

- Swap green beans for asparagus or broccoli.
