- 1 cup freshly squeezed lemon juice (about 4-6 lemons)
- 3/4 cup sugar or honey (adjust to taste)
- 3 cups water, divided
- 1 tablespoon dried culinary lavender
- Ice cubes
- Lemon slices and lavender sprigs (for garnish)
- Optional: a drop of purple food coloring for a vibrant hue
Instructions
- In a small saucepan, combine 1 cup water, sugar (or honey), and dried lavender. Bring to a simmer, stirring to dissolve the sugar.
- Remove from heat and let steep for 10–15 minutes. Strain to remove lavender buds.
- In a pitcher, combine the lemon juice, remaining 2 cups of cold water, and the lavender syrup.
- Stir well and adjust sweetness or lemon juice to taste.
- Chill in the refrigerator or serve immediately over ice.
- Garnish with lemon slices and lavender sprigs.
Notes
- Use only food-grade lavender—ornamental varieties can be bitter or unsafe.
- For a stronger lavender flavor, steep longer or double the dried lavender.
- Add sparkling water for a bubbly version.
- A tiny drop of beet juice or blueberry juice can enhance the color naturally.
