Description
Gyeran Mari, or Korean Rolled Omelette, is a savory, fluffy egg roll made with finely chopped vegetables and sometimes ham or cheese. A classic Korean side dish (banchan), it’s simple to prepare, visually appealing, and perfect for breakfast, lunchboxes, or meal prep.

- 4 large eggs
- 1 tbsp milk (optional, for fluffiness)
- 2 tbsp carrot, finely minced
- 2 tbsp green onion, finely chopped
- 2 tbsp onion or bell pepper, finely minced
- 1 tbsp ham or cooked spam (optional), finely diced
- 1/4 tsp salt
- 1 tsp oil (for cooking)
Instructions
- Crack eggs into a bowl and whisk with milk and salt until smooth.
- Stir in chopped vegetables and ham (if using).
- Heat a lightly oiled nonstick pan over low to medium heat. Pour a thin layer of the egg mixture into the pan.
- Once set but still slightly soft, begin rolling the omelette from one side to the other with a spatula.
- Push the rolled egg to one side of the pan. Pour more egg mixture into the empty space, lift the roll slightly to let the egg flow underneath, and repeat the rolling process.
- Repeat until all the egg mixture is used.
- Let cool slightly, slice into rounds, and serve.
Notes
- Cook over low heat to avoid browning and keep the omelette tender.
- Add cheese, seaweed, or kimchi for different flavor variations.
- Works great in lunchboxes (dosirak) or as a side with rice.
