Description

This Korean beef and kimchi stir-fry is a fast, flavor-packed meal made with tender beef slices, spicy fermented kimchi, and savory-sweet sauce. Ready in under 30 minutes, it’s perfect for busy nights, meal prep, or when you’re craving bold Korean flavors without much effort.

Ingredients

Units Scale
  • 1 lb thinly sliced beef (ribeye, sirloin, or flank)
  • 1 tablespoon sesame oil
  • 2 cups napa cabbage kimchi, chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (optional)
  • Cooked rice, for serving

Instructions

  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Add sliced beef and cook until just browned, about 3–4 minutes.
  • Stir in garlic and ginger; sauté for 1 minute until fragrant.
  • Add chopped kimchi, gochujang, soy sauce, rice vinegar, and sugar. Mix well.
  • Cook for 4–5 minutes, allowing the kimchi to caramelize slightly and beef to soak in the flavors.
  • Stir in green onions and cook for another minute.
  • Sprinkle with sesame seeds and serve hot over rice.

Notes

  • For extra depth, use well-fermented kimchi.
  • Can be made spicy or mild depending on gochujang amount.
  • Great for meal prep—just store with rice in airtight containers.
  • Add sautéed mushrooms or spinach for more veggies.
