Description

These Koi Pond Cupcakes are visually captivating treats inspired by tranquil koi ponds. Soft vanilla cupcakes are topped with a clear blue jelly glaze, edible koi fish decorations, and lily pads made of fondant or candy.   • 1 packet clear unflavored gelatin
  • 1 cup water
  • 2 tablespoons sugar
  • A drop of blue food coloring

  • Edible koi fish (made from fondant, candy, or white chocolate molds with food coloring)
  • Green fondant or candy melts for lily pads
  • Optional: edible flowers, glitter, or small pearls for extra pond sparkle

Instructions

  • Bake the Cupcakes:
  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Cream butter and sugar until light and fluffy. Add eggs and vanilla.
  • Mix in flour, baking powder, and salt alternately with milk.
  • Divide batter evenly and bake 18–20 minutes until a toothpick comes out clean. Cool completely.
  • Make Jelly Topping:
  • In a saucepan, combine gelatin, water, and sugar. Heat gently until dissolved.
  • Add a tiny drop of blue food coloring to achieve a “pond water” shade. Let cool until slightly thickened but pourable.
  • Decorate the Cupcakes:
  • Using a small spoon, gently scoop a shallow cavity into each cooled cupcake top.
  • Fill the cavity with jelly mixture. Before it sets, place koi fish and lily pad decorations on top.
  • Chill to set completely.

Notes

  • Use silicone koi fish molds for easy chocolate decorations.
