Instructions
- Bake the Cupcakes:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Cream butter and sugar until light and fluffy. Add eggs and vanilla.
- Mix in flour, baking powder, and salt alternately with milk.
- Divide batter evenly and bake 18–20 minutes until a toothpick comes out clean. Cool completely.
- Make Jelly Topping:
- In a saucepan, combine gelatin, water, and sugar. Heat gently until dissolved.
- Add a tiny drop of blue food coloring to achieve a “pond water” shade. Let cool until slightly thickened but pourable.
- Decorate the Cupcakes:
- Using a small spoon, gently scoop a shallow cavity into each cooled cupcake top.
- Fill the cavity with jelly mixture. Before it sets, place koi fish and lily pad decorations on top.
- Chill to set completely.
