Ingredients

  • 3 cups cooked chicken breast, shredded or cubed
  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp paprika (optional, for topping)
  • Chopped fresh parsley or chives (for garnish)

Instructions

  • Preheat oven to 400°F (200°C)
  • Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until slightly tender
  • In a large bowl, mix sour cream, cream cheese, 1 cup cheddar, Parmesan, garlic powder, onion powder, and parsley
  • Add in cooked chicken and roasted cauliflower, stirring to coat everything in the cheese mixture
  • Transfer to a greased 9×13-inch baking dish. Top with remaining ½ cup cheddar cheese and sprinkle with paprika
  • Bake for 20 minutes or until hot and bubbly
  • Garnish with fresh parsley or chives before serving
