- 3 cups cooked chicken breast, shredded or cubed
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup sour cream
- 1/2 cup cream cheese, softened
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried parsley
- 1/2 tsp paprika (optional, for topping)
- Chopped fresh parsley or chives (for garnish)
Instructions
- Preheat oven to 400°F (200°C)
- Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until slightly tender
- In a large bowl, mix sour cream, cream cheese, 1 cup cheddar, Parmesan, garlic powder, onion powder, and parsley
- Add in cooked chicken and roasted cauliflower, stirring to coat everything in the cheese mixture
- Transfer to a greased 9×13-inch baking dish. Top with remaining ½ cup cheddar cheese and sprinkle with paprika
- Bake for 20 minutes or until hot and bubbly
- Garnish with fresh parsley or chives before serving
