Ingredients

  • 3 cups cooked shredded chicken (rotisserie chicken works great)
  • 6 slices bacon, cooked and crumbled
  • 1 cup ranch dressing (sugar-free/keto-friendly)
  • 1/2 cup sour cream
  • 1/2 cup cream cheese, softened
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped green onions (optional for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease an 8×8 or 9×9-inch casserole dish
  • In a large bowl, combine ranch dressing, sour cream, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth
  • Stir in shredded chicken and half of the crumbled bacon
  • Spread mixture into the casserole dish and top with cheddar and mozzarella cheeses
  • Bake for 20–25 minutes, until bubbly and cheese is golden
  • Top with remaining bacon and chopped green onions before serving
