For the Filling:
- 1 10 oz bag Tostitos Scoops tortilla chips
- 1 8 oz block cream cheese, softened
- 8 oz shredded mozzarella cheese
- 1 large egg
- 1 15 oz can sweet corn, drained
- 1 4 oz can green chiles (mild or medium)
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
For the Topping:
- 1/2 cup grated Parmesan cheese
Instructions
Step 1: Prepare the Oven and Baking Sheets
- Preheat your oven to 425°F (220°C).
- Lightly grease baking sheets or line them with parchment paper. Arrange the Tostitos Scoops on the sheets, cup side up.
Step 2: Mix the Filling
- In a large mixing bowl, combine softened cream cheese, shredded mozzarella, egg, drained corn, green chiles, garlic powder, salt, and black pepper. Mix until well combined.
Step 3: Assemble the Bites
- Fill each tortilla chip with about 1 tablespoon of the filling mixture. Be careful not to overfill.
- Sprinkle grated Parmesan cheese over the top of each filled chip.
Step 4: Bake
- Place the baking sheets in the oven and bake for 13–15 minutes, or until the tops are golden and the cheese is bubbling.
Step 5: Serve and Enjoy
