  • 4 (6-ounce) bone-in chicken thighs, with skin
  • 2 tablespoons olive oil
  • 1 (4-ounce) package sliced fresh mushrooms
  • 3 stalks celery, chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14-ounce) can stewed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons herbes de Provence
  • 3/4 cup water
  • 3 cubes chicken bouillon, crumbled
  • 1 pinch red pepper flakes (optional)
  • 1 pinch ground black pepper, to taste (optional)

Instructions

  1. Prepare Chicken: Rinse chicken thighs and pat dry. Set the Instant Pot to Sauté mode. Add olive oil and brown chicken thighs, about 6 minutes per side. Remove and set aside.
  2. Cook Vegetables: Sauté mushrooms, celery, and onion in the pot until soft, about 5 minutes. Add garlic and cook until fragrant, about 2 minutes.
  3. Combine Ingredients: Return chicken to the pot. Add stewed tomatoes, tomato paste, herbes de Provence, water, and chicken bouillon. Stir to combine.
  4. Pressure Cook: Close and lock the lid. Set the Instant Pot to High Pressure and cook for 11 minutes. Allow 10-15 minutes for the pressure to build.
  5. Release Pressure: Use the quick-release method to safely release pressure, about 5 minutes. Open the lid carefully. Check that the chicken has reached an internal temperature of 165°F (74°C).
  6. Season and Serve: Season with red pepper flakes and black pepper if desired. Serve hot and enjoy!
