A healthy and flavorful twist on traditional pizza, this Hummus and Veggie Pita Pizza is loaded with fresh vegetables and creamy hummus on a warm pita base.

- 2 whole wheat pita breads
- 1/2 cup hummus (any flavor)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup shredded carrots
- 2 tablespoons red onion, thinly sliced
- 1 tablespoon olive oil (optional)
- 1 tablespoon chopped fresh parsley (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place pita breads on a baking sheet and bake for 5-7 minutes until slightly crisp.
- Remove from oven and allow to cool slightly.
- Spread a generous layer of hummus over each pita.
- Top with cherry tomatoes, cucumber, red bell pepper, shredded carrots, and red onion.
- Drizzle with olive oil if using, and season with salt and pepper.
- Garnish with chopped parsley.
- Cut into slices and serve immediately.
