Description

A healthy and flavorful twist on traditional pizza, this Hummus and Veggie Pita Pizza is loaded with fresh vegetables and creamy hummus on a warm pita base.


Ingredients

  • 2 whole wheat pita breads
  • 1/2 cup hummus (any flavor)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup shredded carrots
  • 2 tablespoons red onion, thinly sliced
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon chopped fresh parsley (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place pita breads on a baking sheet and bake for 5-7 minutes until slightly crisp.
  3. Remove from oven and allow to cool slightly.
  4. Spread a generous layer of hummus over each pita.
  5. Top with cherry tomatoes, cucumber, red bell pepper, shredded carrots, and red onion.
  6. Drizzle with olive oil if using, and season with salt and pepper.
  7. Garnish with chopped parsley.
  8. Cut into slices and serve immediately.
