Description

Ingredients

  • 1 tbsp honey

Instructions

  1. In a small bowl, whisk together olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine chickpeas, spinach, red onion, and cherry tomatoes.
  3. Drizzle the honey mustard dressing over the salad and toss to coat evenly.
  4. Top with crumbled feta cheese if using.
  5. Serve immediately or chill in the fridge for 10-15 minutes for enhanced flavor.
