- 1 tsp granulated sugar
- 4 cups all-purpose flour
- 1 tsp salt

- 1/2 cup baking soda
- 9 cups water
- For topping:
- 1 egg, beaten (for egg wash)
- Coarse sea salt or pretzel salt

- Activate yeast: In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Make the dough: Add melted butter, flour, and salt. Mix until a soft dough forms, then knead for 5–7 minutes until smooth.
- Let rise: Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
- Preheat oven: Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Shape bites: Punch down dough and divide into 6 pieces. Roll each into a 20-inch rope, then cut into 1-inch pieces.
- Boil in baking soda water: Bring 9 cups water and baking soda to a boil. Drop dough pieces in for 20–30 seconds, then transfer to the baking sheet.
- Bake: Brush with egg wash, sprinkle with salt, and bake for 12–15 minutes until golden brown.
- Optional: Brush with melted butter right out of the oven for extra flavor.
