For the Onion Rings:

  • 2 large yellow onions, sliced into 1/2-inch rings
  • 2 cups panko breadcrumbs
  • 1/2 cup flour (for dusting)

For the Batter:

  • 1/2 cup flour
  • 1 cup milk
  • 1 large egg
  • 1/2 tsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper

For Frying:

  • 1 cup canola oil (or more, as needed)

Instructions

  • Prepare the Onions

    • Peel the onions and slice them into ½-inch thick rings.
    • Separate the rings using your hands.
  • Set Up a Dredging Station

    • Bowl 1: Add ½ cup flour for dusting.
    • Bowl 2: Whisk together flour, milk, egg, brown sugar, and seasonings to make the batter.
    • Bowl 3: Place panko breadcrumbs in a separate bowl.
  • Coat the Onion Rings

    • Dust each onion ring in flour.
    • Dip into the batter, ensuring it’s fully coated.
    • Press into the panko, coating evenly.
    • Place on a tray until ready to fry.
  • Fry the Onion Rings

    • Heat canola oil in a frying pan over medium-high heat.
    • Once hot (about 350°F), fry the onion rings for 2-3 minutes per side until golden brown.
    • Drain on a paper towel-lined tray and season immediately with kosher salt.
