For the Doughnuts:
- 3 tbsp milk
- 3 tbsp boiling water
- 1 tsp dry active yeast
- 8 oz all-purpose flour (just under 2 cups)
- 1 1/2 oz sugar (about 3 tbsp)
- 1 egg
- 1 oz butter, cold to room temperature
- Dash of salt
- Oil for frying (enough to cover the bottom few inches of a wok or deep fryer)
For the Glaze:
- 1/3 cup butter
- 2 cups confectioners’ sugar
- 1 1/2 tsp vanilla extract
- 4 tbsp hot water (or as needed for desired consistency)
Instructions
Step 1: Activate the Yeast
- Combine the milk and boiling water in a measuring jug.
- Stir in 1 tsp of sugar and the yeast. Let it sit in a warm place for 5–10 minutes, or until frothy.
Step 2: Prepare the Dough
- In a mixing bowl, combine the flour, remaining sugar, and salt. Cut in the butter until the mixture resembles crumbs.
- Add the egg and yeast mixture to the flour mixture. Mix until a smooth dough forms, about 5 minutes.
Step 3: Knead and Rise
- Turn the dough onto a lightly floured surface and knead for 5–10 minutes, until it becomes springy and smooth.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour, or until it doubles in size.
Step 4: Shape the Doughnuts
- Divide the risen dough into 4 portions and stretch each into a rope. Cut into small strips, roll them into balls, and let them rise again for about 15 minutes.
Step 5: Fry the Doughnuts
- Heat oil to 375°F (190°C).
- Fry the doughnuts in batches for about 2 minutes per side, or until golden brown.
- Drain on paper towels or a wire rack.
Step 6: Make the Glaze
- In a bowl, melt the butter and mix it with confectioners’ sugar, vanilla, and hot water until smooth. Adjust the water for desired consistency.
Step 7: Glaze the Doughnuts
- Dip the warm doughnuts into the glaze, ensuring an even coating. Let them sit briefly to allow the glaze to set.
