Description

Ingredients

For the Doughnuts:

  • 3 tbsp milk
  • 3 tbsp boiling water
  • 1 tsp dry active yeast
  • 8 oz all-purpose flour (just under 2 cups)
  • 1 1/2 oz sugar (about 3 tbsp)
  • 1 egg
  • 1 oz butter, cold to room temperature
  • Dash of salt
  • Oil for frying (enough to cover the bottom few inches of a wok or deep fryer)

For the Glaze:

  • 1/3 cup butter
  • 2 cups confectioners’ sugar
  • 1 1/2 tsp vanilla extract
  • 4 tbsp hot water (or as needed for desired consistency)

Instructions

Step 1: Activate the Yeast

  1. Combine the milk and boiling water in a measuring jug.
  2. Stir in 1 tsp of sugar and the yeast. Let it sit in a warm place for 5–10 minutes, or until frothy.

Step 2: Prepare the Dough

  1. In a mixing bowl, combine the flour, remaining sugar, and salt. Cut in the butter until the mixture resembles crumbs.
  2. Add the egg and yeast mixture to the flour mixture. Mix until a smooth dough forms, about 5 minutes.

Step 3: Knead and Rise

  1. Turn the dough onto a lightly floured surface and knead for 5–10 minutes, until it becomes springy and smooth.
  2. Place the dough in a greased bowl, cover, and let it rise for 1 hour, or until it doubles in size.

Step 4: Shape the Doughnuts

  1. Divide the risen dough into 4 portions and stretch each into a rope. Cut into small strips, roll them into balls, and let them rise again for about 15 minutes.

Step 5: Fry the Doughnuts

  1. Heat oil to 375°F (190°C).
  2. Fry the doughnuts in batches for about 2 minutes per side, or until golden brown.
  3. Drain on paper towels or a wire rack.

Step 6: Make the Glaze

  1. In a bowl, melt the butter and mix it with confectioners’ sugar, vanilla, and hot water until smooth. Adjust the water for desired consistency.

Step 7: Glaze the Doughnuts

  • Dip the warm doughnuts into the glaze, ensuring an even coating. Let them sit briefly to allow the glaze to set.
