Ingredients

Units Scale
  • 1/2 cup peach juice or peach nectar
  • 2 tablespoons lemon juice
  • 2 tablespoons light corn syrup
  • 3 tablespoons unflavored gelatin (about 3 packets)
  • 1/2 cup granulated sugar (for the gummy mix)
  • Food coloring (orange and yellow, optional)
  • 1/4 cup citric acid + 1/2 cup granulated sugar (for coating)

Instructions

  • In a small saucepan, combine peach juice, lemon juice, and corn syrup. Stir over low heat until warm.
  • Slowly sprinkle in the gelatin while whisking constantly to avoid clumping. Continue stirring until fully dissolved.
  • Add sugar and stir until melted. Add food coloring, if using.
  • Pour the mixture into a silicone peach ring mold or a lightly greased round mold. Chill in the refrigerator for 1–2 hours or until set.
  • Unmold the gummies. Mix citric acid and sugar in a shallow bowl. Toss gummies in the coating until well covered.
  • Let coated gummies air-dry for 2–3 hours for a firmer texture.

Notes

  • Use silicone molds for best results and easy release.
  • Store gummies in an airtight container with a little cornstarch to prevent sticking.
  • Adjust the sourness by varying the amount of citric acid in the coating.
