- 8 cups plain popped popcorn (about 1/3 cup unpopped kernels)
- 3 tbsp unsalted butter
- 1 (10 oz) bag mini marshmallows
- 1/2 tsp vanilla extract
- 1/4 cup rainbow sprinkles
- Pinch of salt
- Optional: white chocolate chips or candy melts for drizzle
Instructions
- Prep Popcorn: Pop the kernels and place the popcorn in a large mixing bowl. Remove any unpopped kernels.
- Melt Marshmallows: In a saucepan over medium heat, melt the butter. Add mini marshmallows and stir until completely melted and smooth. Remove from heat and stir in vanilla and salt.
- Mix Together: Immediately pour the marshmallow mixture over the popcorn and quickly toss to coat evenly.
- Add Sprinkles: While still sticky, fold in the sprinkles (save a few to sprinkle on top).
- Shape & Set: Press into a greased 9×13-inch pan or shape into balls or clusters with oiled hands. Let cool for 20–30 minutes until set.
- Optional Drizzle: Melt white chocolate or candy melts and drizzle on top for extra sweetness and sparkle.
Notes
- Use gel-based sprinkles (jimmies) to prevent color bleeding.
- Add mix-ins like crushed cookies, pretzels, or mini M&Ms for a twist.
- Store in an airtight container at room temp for up to 3 days.
