- 2 1/2 lbs apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tbsp all-purpose flour
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tbsp butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tbsp milk (for egg wash)
- 1 recipe Buttery Flaky Pie Crust (top and bottom crust)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss sliced apples with sugars, flour, lemon juice, cinnamon, nutmeg, and salt. Let sit for 15 minutes to draw out juices.
- Roll out the bottom pie crust and place it in a 9-inch pie dish. Trim excess dough from the edges.
- Fill the crust with the apple mixture, mounding slightly in the center. Dot with butter.
- Roll out the top crust and place over the apples. Trim, seal, and crimp the edges. Cut slits in the top to allow steam to escape.
- In a small bowl, mix the egg and milk. Brush over the top crust for a golden finish.
- Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
- If the crust browns too quickly, cover the edges with foil during baking.
- Let pie cool for at least 2 hours before serving to allow filling to set.
