Description

Healthy Chicken Lettuce Wraps are a flavorful, low-carb meal loaded with lean ground chicken, crunchy vegetables, and a savory Asian-inspired sauce. Wrapped in crisp lettuce leaves, they make a light yet satisfying dish perfect for lunch, dinner, or even meal prep. Quick to cook and bursting with umami flavor.


Ingredients

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup yellow onion, finely chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup water chestnuts, chopped
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 head butter lettuce or romaine, leaves separated and washed
  • Chopped green onions and sesame seeds, for garnish

Instructions

  • Heat olive oil in a skillet over medium heat. Add garlic, ginger, and onions; sauté until soft.
  • Add ground chicken and cook until browned, breaking it apart as it cooks.
  • Stir in bell pepper, water chestnuts, soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes.
  • Cook for another 3–4 minutes until well combined and sauce has slightly reduced.
  • Spoon mixture into lettuce leaves.
  • Garnish with green onions and sesame seeds. Serve immediately.

Notes

  • Use tamari or coconut aminos for a gluten-free option
  • Swap in ground turkey or tofu if preferred
  • Delicious with a side of rice or on its own for a low-carb meal
