- 1 lb ground chicken
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup yellow onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1/2 cup water chestnuts, chopped
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- 1 head butter lettuce or romaine, leaves separated and washed
- Chopped green onions and sesame seeds, for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add garlic, ginger, and onions; sauté until soft.
- Add ground chicken and cook until browned, breaking it apart as it cooks.
- Stir in bell pepper, water chestnuts, soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes.
- Cook for another 3–4 minutes until well combined and sauce has slightly reduced.
- Spoon mixture into lettuce leaves.
- Garnish with green onions and sesame seeds. Serve immediately.
Notes
- Use tamari or coconut aminos for a gluten-free option
- Swap in ground turkey or tofu if preferred
- Delicious with a side of rice or on its own for a low-carb meal
