Description

These Healthy Banana Oatmeal Cookies are soft, naturally sweetened, and made with wholesome ingredients. Perfect for breakfast or a guilt-free snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup almond butter (or any nut butter)
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, almond butter, cinnamon, vanilla extract, and salt to the bowl. Mix until well combined.
  4. Fold in the chocolate chips if using.
  5. Scoop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly with the back of a spoon.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
