- 1 lb ground beef
- 1 small onion, diced
- 3 cups thinly sliced potatoes (Yukon gold or russet)
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat. Season with salt, pepper, and garlic powder.
- In a bowl, mix cream of mushroom soup, milk, and paprika until smooth.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the soup mixture. Repeat layers.
- Cover with foil and bake for 1 hour.
- Remove foil, sprinkle with cheddar cheese, and bake uncovered for 15–20 more minutes, or until potatoes are fork-tender and cheese is bubbly.
- Let rest 10 minutes before serving. Garnish with parsley if desired.
Notes
- For added texture, top with crushed Ritz crackers or fried onions before baking the cheese layer.
- Can substitute cream of mushroom soup with cream of chicken or homemade white sauce.
