Description

This Halal Roast Turkey with Stuffing is a juicy, golden bird seasoned with fragrant herbs and spices, paired with a savory, halal-friendly bread stuffing. Perfect for Thanksgiving, Eid, or any celebration, this recipe is both festive and full of comforting flavor.

  • For the Turkey:
  • 1 whole halal-certified turkey (1214 lbs), thawed
  • 1/2 cup butter or olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon paprika
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 1 lemon, halved
  • Fresh herbs (thyme, rosemary, parsley) for cavity
  • For the Stuffing:
  • 6 cups cubed day-old bread (white or whole grain)
  • 1/4 cup olive oil or melted butter
  • 1 onion, finely diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 1 1/2 cups vegetable or halal chicken broth
  • Optional: 1/2 cup chopped walnuts, cranberries, or cooked halal sausage

Instructions

  • Prep the Turkey:
  • Preheat oven to 325°F (165°C). Pat turkey dry. Mix butter/oil with garlic, herbs, lemon juice, paprika, salt, and pepper. Rub mixture under and over the skin. Stuff the cavity with onion, lemon, and herbs.
  • Make the Stuffing:
  • In a pan, sauté onion, celery, and garlic in oil/butter until softened. Add spices and mix in bread cubes. Pour in broth gradually, tossing until moist but not soggy. Stir in optional add-ins.
  • Roast the Turkey:
  • Place turkey on a rack in a roasting pan. Loosely stuff the cavity if desired (or bake stuffing separately at 350°F for 30–35 mins). Cover loosely with foil.
  • Cooking Time:
  • Roast for 15 minutes per pound, or until internal temperature reaches 165°F in the thickest part of the thigh. Baste occasionally. Remove foil in last 30–45 minutes for browning.
  • Rest & Serve:
  • Let turkey rest 20–30 minutes before carving. Serve with stuffing, gravy, and your favorite sides.

  • For safety and even cooking, bake stuffing separately if preferred.
