Description
Gyeran Mari is a Korean rolled omelette made with beaten eggs and various finely chopped vegetables. It’s a simple, flavorful dish often served as a side dish (banchan) in Korean meals.

- 4 large eggs
- 2 tablespoons milk (optional for fluffiness)
- 2 tablespoons finely chopped carrot
- 2 tablespoons finely chopped green onion
- 2 tablespoons finely chopped bell pepper (any color)
- 1/4 teaspoon salt
- 1 tablespoon vegetable oil (for cooking)
Instructions
- Crack the eggs into a bowl, add salt and milk (if using), and beat well until combined.
- Add the chopped carrot, green onion, and bell pepper to the eggs and mix thoroughly.
- Heat a non-stick frying pan over medium-low heat and add a bit of oil.
- Pour a thin layer of the egg mixture into the pan, tilting to spread evenly.
- As the egg starts to set but is still slightly wet on top, begin rolling it from one side to the other using a spatula or chopsticks.
- Move the rolled part to one side of the pan and add more egg mixture to fill the empty space.
- Repeat the process of cooking and rolling until all the egg mixture is used.
- Remove from the pan and let it rest for a minute. Slice into 1/2 inch thick pieces and serve.
Notes
- You can add cooked ham, imitation crab, or cheese for variety.
- Cook on low heat to avoid browning and ensure even cooking.
- Make sure the vegetables are finely chopped so they cook quickly and blend into the eggs.
