- 4 Italian sausages (pork or chicken)
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 4 sandwich rolls or hoagie buns (optional)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, toss sliced peppers and onions with olive oil, oregano, salt, and pepper.
- Place sausages on the grill and cook for about 12-15 minutes, turning occasionally, until cooked through and charred.
- While sausages are grilling, place the pepper and onion mixture in a grill basket or foil packet and grill for 10-12 minutes, stirring occasionally, until tender and slightly charred.
- Optional: Toast the rolls on the grill for 1-2 minutes.
- Serve the grilled sausages with the peppers and onions, either on their own or in sandwich rolls.
Notes
- You can use any variety of sausages, including plant-based for a vegetarian option.
- Add garlic or balsamic vinegar to the pepper mix for added flavor.
- Grill everything on a stovetop grill pan if outdoor grilling isn’t available.
