Description
Savory and slightly sweet grilled chicken skewers marinated in a flavorful miso honey mustard sauce, perfect for barbecues or summer dinners.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons white miso paste
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, whisk together miso paste, Dijon mustard, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth.
- Place chicken pieces in a large zip-top bag or bowl and pour marinade over the chicken. Mix well to coat. Marinate for at least 1 hour, preferably overnight in the refrigerator.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling.
- Preheat grill to medium-high heat.
- Thread marinated chicken pieces onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and nicely charred.
- Remove from grill and let rest for a few minutes before serving.
Notes
- You can substitute chicken breasts if preferred, but thighs provide more flavor and tenderness.
- Serve with rice, grilled vegetables, or salad for a complete meal.
- Reserve a little marinade (before adding chicken) to use as a dipping sauce.
