Description

Savory and slightly sweet grilled chicken skewers marinated in a flavorful miso honey mustard sauce, perfect for barbecues or summer dinners.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons white miso paste
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, whisk together miso paste, Dijon mustard, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth.
  2. Place chicken pieces in a large zip-top bag or bowl and pour marinade over the chicken. Mix well to coat. Marinate for at least 1 hour, preferably overnight in the refrigerator.
  3. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  4. Preheat grill to medium-high heat.
  5. Thread marinated chicken pieces onto skewers.
  6. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and nicely charred.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

  • You can substitute chicken breasts if preferred, but thighs provide more flavor and tenderness.
  • Serve with rice, grilled vegetables, or salad for a complete meal.
  • Reserve a little marinade (before adding chicken) to use as a dipping sauce.
