Description

Tender and juicy grilled chicken kabobs marinated in a flavorful blend of spices and grilled to perfection with colorful vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and black pepper to make the marinade.
  2. Add chicken cubes to the marinade and refrigerate for at least 30 minutes (up to 4 hours).
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Preheat grill to medium-high heat.
  5. Thread chicken, bell peppers, onion, and zucchini alternately onto skewers.
  6. Grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through and has grill marks.
  7. Remove from grill and let rest for 5 minutes before serving.

Notes

  • You can substitute vegetables based on preference.
  • Marinate overnight for deeper flavor.
  • Use a meat thermometer to ensure chicken reaches 165°F internally.
