- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and black pepper to make the marinade.
- Add chicken cubes to the marinade and refrigerate for at least 30 minutes (up to 4 hours).
- If using wooden skewers, soak them in water for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread chicken, bell peppers, onion, and zucchini alternately onto skewers.
- Grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through and has grill marks.
- Remove from grill and let rest for 5 minutes before serving.
Notes
- You can substitute vegetables based on preference.
- Marinate overnight for deeper flavor.
- Use a meat thermometer to ensure chicken reaches 165°F internally.
