  • For the Honey Dijon dressing:
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  • Grill the chicken over medium-high heat until fully cooked, about 6–7 minutes per side. Let rest, then slice.
  • In a small bowl, whisk together all dressing ingredients until emulsified. Adjust seasoning to taste.
  • On a large platter or in a bowl, arrange the greens as a base. Top with rows or sections of sliced chicken, eggs, avocado, cherry tomatoes, cucumber, red onion, bacon, and cheese.
  • Drizzle with honey Dijon dressing before serving or serve dressing on the side.

  • You can use rotisserie or leftover chicken for a faster prep.
