- For the salad:
- 2 grilled chicken breasts, sliced
- 4 cups romaine or mixed greens
- 2 hard-boiled eggs, halved
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 4 strips bacon, cooked and crumbled
- 1/4 cup blue cheese or feta, crumbled (optional)
- For the Honey Dijon dressing:
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 2 tablespoons apple cider vinegar or lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Grill the chicken over medium-high heat until fully cooked, about 6–7 minutes per side. Let rest, then slice.
- In a small bowl, whisk together all dressing ingredients until emulsified. Adjust seasoning to taste.
- On a large platter or in a bowl, arrange the greens as a base. Top with rows or sections of sliced chicken, eggs, avocado, cherry tomatoes, cucumber, red onion, bacon, and cheese.
- Drizzle with honey Dijon dressing before serving or serve dressing on the side.
Notes
- You can use rotisserie or leftover chicken for a faster prep.
- For a lighter version, use turkey bacon and skip the cheese.
- Keeps well without avocado and dressing for meal prep (add before serving).
