Description

Greek Marinated Salmon with Asparagus is a bright, Mediterranean-inspired dish that pairs flaky salmon with tender asparagus in a lemon-herb marinade full of oregano, garlic, and olive oil. It’s perfect for a nutritious and quick weeknight meal. Keywords: Greek Marinated Salmon with Asparagus, Mediterranean salmon recipe, lemon herb salmon, healthy salmon dinner

Ingredients

Scale
  • 2 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, ends trimmed
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley or dill (for garnish)
  • Lemon wedges, for serving

Instructions

  • In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, red pepper flakes, salt, and pepper.
  • Place salmon and asparagus in a shallow dish or zip-top bag. Pour marinade over them, ensuring everything is coated. Marinate for at least 20 minutes.
  • Preheat oven to 400°F (200°C) or preheat grill.
  • Arrange salmon and asparagus on a lined baking sheet or grill pan. Bake or grill for 12–15 minutes, until salmon flakes easily and asparagus is tender.
  • Serve garnished with fresh herbs and lemon wedges.

Notes

  • For extra flavor, marinate the salmon up to 2 hours in advance.
  • Swap asparagus for green beans or zucchini if desired.
  • This dish pairs beautifully with couscous, quinoa, or a Greek salad.
