Dairy:

  • 1/2 cup ricotta cheese
  • 4 slices provolone cheese
  • 2 tbsp grated Parmesan cheese

Produce:

  • 1 cup fresh spinach
  • 2 tbsp chopped fresh basil
  • 2 tbsp sun-dried tomatoes (chopped)

Bread & Baked Goods:

  • 4 slices of artisan bread

Oils & Fats:

  • 2 tbsp butter (softened)

Seasoning:

  • Salt and pepper (to taste)

Instructions

  1. Prepare the Filling:
    • In a small bowl, mix the ricotta cheese, grated Parmesan, and a pinch of salt and pepper. Set aside.
  2. Assemble the Sandwich:
    • Spread the ricotta mixture on two slices of bread.
    • Layer fresh spinach, chopped basil, and sun-dried tomatoes over the ricotta.
    • Top with a slice of provolone cheese and close the sandwich with the remaining bread slices.
  3. Butter the Bread:
    • Spread softened butter evenly on the outside of each slice of bread.
  4. Grill the Sandwich:
    • Heat a non-stick skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
  5. Serve:
    • Slice the sandwiches in half and serve warm. Add a side of soup or salad for a complete meal.

  • Substitute provolone with mozzarella or Swiss cheese if desired.
