Description

These Golden-Brown Roasted Potatoes are crispy on the outside, tender on the inside, and packed with garlic and herb flavors. A simple and delicious side dish that pairs perfectly with any meal!


Ingredients

  • 2 lbs baby potatoes (halved)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano (or thyme)
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  • Preheat oven to 425°F (220°C).
  • In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, paprika, oregano, and red pepper flakes.
  • Spread potatoes in a single layer on a baking sheet, cut-side down.
  • Roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.
  • Remove from oven, sprinkle with fresh parsley, and serve hot!

Notes

  • Extra Crispy Tip: Soak potatoes in cold water for 30 minutes before roasting.
  • Add Cheese: Sprinkle with Parmesan in the last 5 minutes of baking.
