- 2 lbs baby potatoes (halved)
- 3 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano (or thyme)
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, paprika, oregano, and red pepper flakes.
- Spread potatoes in a single layer on a baking sheet, cut-side down.
- Roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.
- Remove from oven, sprinkle with fresh parsley, and serve hot!
Notes
- Extra Crispy Tip: Soak potatoes in cold water for 30 minutes before roasting.
- Add Cheese: Sprinkle with Parmesan in the last 5 minutes of baking.
- Air Fryer Option: Cook at 400°F (200°C) for 18-20 minutes, shaking halfway.
