Ingredients

  • 1/2 tablespoon vodka
  • 1/2 cup heavy cream
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper, to taste
  • 1 cup pasta (e.g., shells or penne)
  • Fresh basil, for garnish (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve ¼ cup of pasta water, then drain.
  2. In a large skillet over medium heat, heat olive oil. Add shallots and garlic and sauté until soft.
  3. Add tomato paste and cook, stirring, until it darkens slightly and caramelizes, about 5 minutes.
  4. Deglaze the pan with vodka, stirring well to incorporate.
  5. Add heavy cream and red pepper flakes, mixing until the sauce is smooth and slightly thickened.
  6. Add cooked pasta and reserved pasta water to the sauce, stirring to combine.
  7. Stir in butter and Parmesan cheese, letting them melt into the sauce.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with extra Parmesan and fresh basil if desired.

Notes

  • You can omit the vodka or replace it with water if preferred.
  • Adjust chili flakes for desired spice level.
  • Use any pasta shape you like, though shells and penne hold sauce well.
