Instructions
- Cook pasta in salted boiling water until al dente. Reserve ¼ cup of pasta water, then drain.
- In a large skillet over medium heat, heat olive oil. Add shallots and garlic and sauté until soft.
- Add tomato paste and cook, stirring, until it darkens slightly and caramelizes, about 5 minutes.
- Deglaze the pan with vodka, stirring well to incorporate.
- Add heavy cream and red pepper flakes, mixing until the sauce is smooth and slightly thickened.
- Add cooked pasta and reserved pasta water to the sauce, stirring to combine.
- Stir in butter and Parmesan cheese, letting them melt into the sauce.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra Parmesan and fresh basil if desired.
Notes
- You can omit the vodka or replace it with water if preferred.
- Adjust chili flakes for desired spice level.
- Use any pasta shape you like, though shells and penne hold sauce well.
