Description

This Garlic Shrimp in Tomato Sauce is a quick and delicious dish with juicy shrimp simmered in a garlicky, herby tomato sauce. Ready in under 20 minutes, it’s perfect as an appetizer, a light main, or served over rice, pasta, or grilled bread.


Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 garlic cloves, thinly sliced or minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 can (14 oz) crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley or basil
  • Optional: splash of white wine or lemon juice

Instructions

  • Cook the Shrimp:
  • Heat olive oil in a skillet over medium-high heat.
  • Add shrimp and cook 1–2 minutes per side until pink and just cooked through. Remove and set aside.
  • Make the Sauce:
  • In the same pan, reduce heat to medium. Add garlic and red pepper flakes. Cook until fragrant, about 1 minute.
  • Add crushed tomatoes, oregano, smoked paprika, salt, and pepper. Simmer 5–7 minutes until slightly thickened.
  • Combine and Serve:
  • Return shrimp to the pan and simmer 1–2 minutes to heat through.
  • Finish with herbs and a splash of lemon juice or wine, if using.
  • Serve warm over pasta, rice, or with crusty bread.

Notes

  • Don’t overcook the shrimp—add them back just before serving.
  • Add olives or capers for a briny twist.
  • Pairs well with a glass of chilled white wine.
