- 1 lb (450g) large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 4 garlic cloves, thinly sliced or minced
- 1/4 teaspoon red pepper flakes (optional)
- 1 can (14 oz) crushed tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 tablespoon chopped fresh parsley or basil
- Optional: splash of white wine or lemon juice
Instructions
- Cook the Shrimp:
- Heat olive oil in a skillet over medium-high heat.
- Add shrimp and cook 1–2 minutes per side until pink and just cooked through. Remove and set aside.
- Make the Sauce:
- In the same pan, reduce heat to medium. Add garlic and red pepper flakes. Cook until fragrant, about 1 minute.
- Add crushed tomatoes, oregano, smoked paprika, salt, and pepper. Simmer 5–7 minutes until slightly thickened.
- Combine and Serve:
- Return shrimp to the pan and simmer 1–2 minutes to heat through.
- Finish with herbs and a splash of lemon juice or wine, if using.
- Serve warm over pasta, rice, or with crusty bread.
Notes
- Don’t overcook the shrimp—add them back just before serving.
- Add olives or capers for a briny twist.
- Pairs well with a glass of chilled white wine.
