Description

This Garlic Herb Roasted Chicken and Potatoes is a simple yet flavorful one-pan meal! Juicy, crispy-skinned chicken is roasted with garlic, herbs, and tender golden potatoes for a comforting and satisfying dinner.

For the Chicken:

  • 4 bone-in, skin-on chicken breasts or thighs
  • 2 tbsp olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Potatoes:

  • 1 1/2 lbs baby potatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat Oven & Prepare the Chicken:

    • Preheat oven to 400°F (200°C).
    • In a small bowl, mix olive oil (or butter), garlic, paprika, oregano, thyme, salt, and black pepper.
    • Rub this mixture all over the chicken pieces, coating them well.
  • Prepare the Potatoes:

    • In a large bowl, toss baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
  • Assemble & Roast:

    • Arrange the seasoned potatoes in a single layer on a large baking sheet or oven-safe skillet.
    • Place the chicken pieces on top of the potatoes, skin-side up.
    • Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  • Crisp & Serve:

    • For extra crispy chicken skin, broil on high for the last 3-5 minutes.
    • Remove from oven, let rest for 5 minutes, then serve warm.

  • Use bone-in, skin-on chicken for the best flavor and juiciness.
  • Swap baby potatoes for sweet potatoes or carrots for variety.
