For the Chicken:
- 4 bone-in, skin-on chicken breasts or thighs
- 2 tbsp olive oil or melted butter
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Potatoes:
- 1 1/2 lbs baby potatoes, halved
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat Oven & Prepare the Chicken:
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil (or butter), garlic, paprika, oregano, thyme, salt, and black pepper.
- Rub this mixture all over the chicken pieces, coating them well.

Prepare the Potatoes:
- In a large bowl, toss baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper.

Assemble & Roast:
- Arrange the seasoned potatoes in a single layer on a large baking sheet or oven-safe skillet.
- Place the chicken pieces on top of the potatoes, skin-side up.
- Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.

- For extra crispy chicken skin, broil on high for the last 3-5 minutes.
- Remove from oven, let rest for 5 minutes, then serve warm.
