- 2 salmon fillets (about 6 oz each)
- 8 oz fettuccine or spaghetti
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the pasta in salted water according to package directions. Drain and set aside.
- Season the salmon fillets with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add salmon and cook for 4-5 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, melt butter and add garlic. Sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan, lemon zest, and lemon juice. Season with salt and pepper.
- Flake the cooked salmon into large chunks and return to the skillet.
- Add the cooked pasta and toss everything gently to combine.
- Garnish with chopped parsley and serve warm.
