Gamja Jorim, or Korean Braised Potatoes, is a savory and slightly sweet side dish (banchan) made with tender baby potatoes simmered in a soy-based glaze. It’s a staple in Korean home cooking—simple, satisfying, and perfect alongside rice or as part of a traditional Korean meal.

- 1 lb baby potatoes (or regular potatoes, chopped)
- 1 cup water
- 3 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp corn syrup or honey
- 1 tbsp rice wine (optional)
- 1 tsp minced garlic
- 1 tbsp vegetable oil
- 1 tsp sesame oil
- 1 tsp sesame seeds (for garnish)
- 1 green onion, chopped (for garnish)
Instructions
- Wash and scrub the baby potatoes. If large, cut into bite-sized pieces.
- In a pan, heat oil over medium heat and sauté potatoes for 2–3 minutes.
- Add water, soy sauce, sugar, corn syrup (or honey), garlic, and rice wine. Bring to a boil.
- Reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally, until liquid reduces and potatoes are tender and glazed.
- Finish with a drizzle of sesame oil and sprinkle with sesame seeds and chopped green onion.
- Serve warm or at room temperature as a banchan.
Notes
- Stir gently to avoid breaking the potatoes.
- For a deeper color and richer flavor, you can add a dash of dark soy sauce.
