Instructions

1. Preheat the Oven:

  • Preheat your oven to 150°C (fan).
  • Line an 8×8” baking tin with parchment paper and lightly grease.

2. Melt Butter and White Chocolate:

  • In a heatproof bowl, melt butter and white chocolate together over a double boiler or microwave in 30-second intervals.
  • Stir until smooth and let cool slightly.

3. Prepare the Batter:

  • In a large mixing bowl, whisk eggs, sugar, and vanilla extract until light and fluffy.
  • Gradually fold in the melted butter and white chocolate mixture.
  • In a separate bowl, whisk flour and salt together, then gently fold into the wet mixture until just combined.

4. Add Caramel Chunks:

  • Fold caramel chunks into the batter, ensuring even distribution.

5. Assemble and Bake:

  • Pour the batter into the prepared baking tin and spread evenly.
  • Drizzle caramel sauce on top and use a skewer or knife to swirl it into the batter.
  • Bake for 25-30 minutes, or until the edges are set, and the center has a slight jiggle.

6. Cool and Slice:
