- 95 g all-purpose flour (plain)
- 1 teaspoon baking powder
- 100 g caster sugar
- 90 g demerara sugar
- 2 tablespoons cocoa powder
- 225 g dark chocolate, melted
- 85 g dark or milk chocolate chips
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Dairy:
- 56 g butter (salted or unsalted)
Instructions
- Prepare the Chocolate Mixture:
- Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water (or microwave in 30-second intervals, stirring between each). Set aside to cool slightly.
- Whisk Wet Ingredients:
- In a mixing bowl, whisk together the eggs, caster sugar, demerara sugar, and vanilla extract until light and fluffy.
- Combine with Chocolate:
- Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until fully combined.
- Mix Dry Ingredients:
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
- Add Chocolate Chips:
- Gently fold in the dark or milk chocolate chips for extra texture and flavor.
- Shape the Browkies:
- Scoop tablespoons of the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake:
- Preheat your oven to 180°C (350°F). Bake the browkies for 10–12 minutes, or until the edges are set but the centers remain soft.
- Cool and Serve:
- Let the browkies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
