- Vegetable oil, for frying

- Glaze (lemon, vanilla, or maple)
Instructions
- Prep Dough: On a floured surface, gently roll out the puff pastry or croissant dough to about 1/4-inch thick. Cut into 2–3 inch squares or desired shapes.
- Heat Oil: In a heavy pot, heat 2–3 inches of vegetable oil to 350°F (175°C).
- Fry the Beignets: Carefully lower 2–3 dough squares at a time into the hot oil. Fry for about 2 minutes per side, until puffed and golden brown.
- Drain: Remove with a slotted spoon and drain on paper towels.
- Dust & Serve: Generously dust with powdered sugar while warm. Serve as-is or fill with pastry cream using a piping bag.

- Use croissant dough for a true buttery, layered texture.
- Make ahead tip: Freeze the cut dough pieces and fry directly from frozen (just add 1–2 minutes cooking time).
