Fresh Berry Chantilly Cake is a layered vanilla sponge cake filled with a cloud-like Chantilly cream made from mascarpone and whipped cream, plus an abundance of juicy fresh berries. This elegant dessert is light, fruity, and perfect for birthdays, brunches, or weddings.

- For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs, room temperature
- 2 tsp vanilla extract
- 1 cup whole milk, room temperature
- For the Chantilly Cream:
- 8 oz mascarpone cheese, softened
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 2 cups heavy whipping cream, cold
- For the Berry Filling:
- 2 cups fresh strawberries, halved or sliced
- 1 cup blueberries
- 1 cup raspberries
- Optional: 1 tbsp sugar and 1 tsp lemon juice for macerating berries
Instructions
- Bake the Cake Layers:
- Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, then stir in vanilla.
- Alternate adding flour mixture and milk, mixing until smooth.
- Divide batter evenly into pans and bake for 25–30 minutes. Let cool completely.
- Make Chantilly Cream:
- Beat mascarpone, cream cheese, powdered sugar, and vanilla until smooth.
- Separately whip cream to stiff peaks.
- Gently fold whipped cream into the cheese mixture until fully combined.
- Prepare Berries:
- Wash and dry berries. If desired, toss with sugar and lemon juice and let sit 15 minutes.
- Assemble the Cake:
- Layer cake with Chantilly cream and fresh berries between each layer.
- Frost top and sides with remaining cream.
- Decorate with additional berries and edible flowers if desired.
Notes
- For best results, chill the cake for at least 1 hour before serving.
- This cake should be kept refrigerated and is best served within 2 days.
- Use a mix of berries for color and flavor contrast.
