Description

This French Coconut Pie is a rich, buttery custard pie loaded with sweet coconut and baked in a flaky pie crust. With its creamy texture and crispy golden top, this classic Southern dessert is incredibly easy to make with simple ingredients!

  • 1 unbaked 9-inch pie crust (store-bought or homemade)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 4 large eggs
  • 1 cup sweetened shredded coconut
  • 1/2 cup unsalted butter (melted)
  • 1 cup evaporated milk (or heavy cream)
  • 1 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  • Step 1: Prepare the Pie Crust
  • Preheat oven to 350°F (175°C).
  • Place the pie crust into a 9-inch pie pan and crimp the edges. Set aside.
  • Step 2: Make the Filling
  • In a large bowl, whisk together granulated sugar, brown sugar, flour, and salt.
  • Add the eggs and whisk until smooth.
  • Stir in melted butter, evaporated milk, and vanilla extract.
  • Fold in the shredded coconut until evenly combined.
  • Step 3: Assemble & Bake
  • Pour the filling into the prepared pie crust.
  • Bake for 45-50 minutes, or until the top is golden brown and the center is set (a slight jiggle is okay).
  • Let the pie cool completely before slicing.
  • Step 4: Serve & Enjoy!
  • Serve at room temperature or chilled, with whipped cream if desired.

Notes

  • For a Lighter Version: Use half the butter and replace evaporated milk with whole milk.
  • Extra Flavor: Add ½ tsp coconut extract for more coconut taste.
