- 1 unbaked 9-inch pie crust (store-bought or homemade)
- 1 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 4 large eggs
- 1 cup sweetened shredded coconut
- 1/2 cup unsalted butter (melted)
- 1 cup evaporated milk (or heavy cream)
- 1 tbsp all-purpose flour
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Step 1: Prepare the Pie Crust
- Preheat oven to 350°F (175°C).
- Place the pie crust into a 9-inch pie pan and crimp the edges. Set aside.
- Step 2: Make the Filling
- In a large bowl, whisk together granulated sugar, brown sugar, flour, and salt.
- Add the eggs and whisk until smooth.
- Stir in melted butter, evaporated milk, and vanilla extract.
- Fold in the shredded coconut until evenly combined.
- Step 3: Assemble & Bake
- Pour the filling into the prepared pie crust.
- Bake for 45-50 minutes, or until the top is golden brown and the center is set (a slight jiggle is okay).
- Let the pie cool completely before slicing.
- Step 4: Serve & Enjoy!
- Serve at room temperature or chilled, with whipped cream if desired.
Notes
- For a Lighter Version: Use half the butter and replace evaporated milk with whole milk.
- Extra Flavor: Add ½ tsp coconut extract for more coconut taste.
