Description

Soft and fluffy yeast-raised donuts filled with a rich and earthy matcha pastry cream, perfect for green tea lovers.

  • 3/4 cup warm milk (110°F/45°C)
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, softened
  • 2 large egg yolks
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar (for coating)
  • 2 cups whole milk (for pastry cream)
  • 3 tablespoons cornstarch
  • 1/2 cup granulated sugar (for pastry cream)
  • 4 large egg yolks (for pastry cream)
  • 2 tablespoons unsalted butter (for pastry cream)
  • 1 tablespoon matcha green tea powder
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, dissolve yeast in warm milk with 1 tablespoon of sugar and let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix flour, remaining sugar, and salt. Add yeast mixture, butter, and egg yolks. Mix until dough forms.
  3. Knead the dough for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
  4. While dough is rising, make the matcha pastry cream: whisk together egg yolks, sugar, cornstarch, and a splash of milk until smooth.
  5. Heat the remaining milk in a saucepan until steaming. Gradually whisk into egg mixture, then return to pan and cook until thickened.
  6. Remove from heat, stir in butter, vanilla, and matcha powder. Strain through a sieve, cover with plastic wrap, and chill.
  7. Once dough has risen, roll out to 1/2-inch thickness and cut into rounds. Let rise again for 30–45 minutes.
  8. Heat oil in a deep pan to 350°F (175°C). Fry donuts 1–2 minutes per side until golden brown. Drain on paper towels.
  9. Roll warm donuts in sugar and let cool slightly.
  10. Fill a piping bag with matcha cream and pipe into the center of each donut before serving.
