- 3/4 cup warm milk (110°F/45°C)
- 1/4 cup granulated sugar
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 2 large egg yolks
- Vegetable oil, for frying
- 1/2 cup granulated sugar (for coating)
- 2 cups whole milk (for pastry cream)
- 3 tablespoons cornstarch

- 2 tablespoons unsalted butter (for pastry cream)
- 1 tablespoon matcha green tea powder
- 1 teaspoon vanilla extract
Instructions
- In a bowl, dissolve yeast in warm milk with 1 tablespoon of sugar and let sit for 5–10 minutes until foamy.
- In a large bowl, mix flour, remaining sugar, and salt. Add yeast mixture, butter, and egg yolks. Mix until dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
- While dough is rising, make the matcha pastry cream: whisk together egg yolks, sugar, cornstarch, and a splash of milk until smooth.
- Heat the remaining milk in a saucepan until steaming. Gradually whisk into egg mixture, then return to pan and cook until thickened.
- Remove from heat, stir in butter, vanilla, and matcha powder. Strain through a sieve, cover with plastic wrap, and chill.
- Once dough has risen, roll out to 1/2-inch thickness and cut into rounds. Let rise again for 30–45 minutes.
- Heat oil in a deep pan to 350°F (175°C). Fry donuts 1–2 minutes per side until golden brown. Drain on paper towels.
- Roll warm donuts in sugar and let cool slightly.
- Fill a piping bag with matcha cream and pipe into the center of each donut before serving.
