Description

A moist, warmly spiced pumpkin bread infused with Chinese five spice for a unique twist on a classic fall treat.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp Chinese five spice powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups canned pumpkin puree
  • 1/4 cup water
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, five spice powder, cinnamon, and nutmeg.
  3. In another bowl, mix the oil, eggs, pumpkin puree, water, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in nuts or chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chinese five spice adds a unique flavor—adjust to taste if you’re new to it.
  • Wrap tightly and store at room temperature for up to 3 days, or freeze for longer storage.
  • You can substitute applesauce for half the oil to reduce fat content.
