- 8 large eggs
- 1/4 cup milk (dairy or plant-based)
- 1 cup chopped seasonal vegetables (zucchini, bell peppers, cherry tomatoes, asparagus, etc.)
- 1/2 cup chopped leafy greens (spinach, kale, or arugula)
- 1/4 cup crumbled feta or goat cheese (optional)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: fresh herbs (basil, parsley, or chives)
Instructions
- Preheat Oven:
- Preheat to 375°F (190°C). Lightly grease a 9-inch oven-safe skillet or baking dish.
- Sauté Vegetables:
- Heat olive oil in a skillet over medium heat. Add chopped vegetables (except leafy greens) and sauté for 5–6 minutes until just tender. Stir in greens and cook for another minute. Remove from heat.
- Mix Eggs:
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Assemble Frittata:
- Pour egg mixture over veggies in the skillet. Sprinkle cheese and fresh herbs over the top.
- Bake:
- Transfer skillet to oven and bake for 18–22 minutes, or until the center is just set. Let cool slightly before slicing.

- Use any cheese you like or skip it for dairy-free.
