Description

This Farmers Market Frittata is a vibrant, oven-baked egg dish loaded with seasonal vegetables and herbs. It’s perfect for brunch, meal prep, or a light lunch—and a great way to use whatever veggies you bring home from the market!


Ingredients

  • 8 large eggs
  • 1/4 cup milk (dairy or plant-based)
  • 1 cup chopped seasonal vegetables (zucchini, bell peppers, cherry tomatoes, asparagus, etc.)
  • 1/2 cup chopped leafy greens (spinach, kale, or arugula)
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: fresh herbs (basil, parsley, or chives)

Instructions

  • Preheat Oven:
  • Preheat to 375°F (190°C). Lightly grease a 9-inch oven-safe skillet or baking dish.
  • Sauté Vegetables:
  • Heat olive oil in a skillet over medium heat. Add chopped vegetables (except leafy greens) and sauté for 5–6 minutes until just tender. Stir in greens and cook for another minute. Remove from heat.
  • Mix Eggs:
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Assemble Frittata:
  • Pour egg mixture over veggies in the skillet. Sprinkle cheese and fresh herbs over the top.
  • Bake:
  • Transfer skillet to oven and bake for 18–22 minutes, or until the center is just set. Let cool slightly before slicing.

Notes

  • Use any cheese you like or skip it for dairy-free.
