Ingredients

Units Scale
  • For the Cake:
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 tsp dried culinary lavender (crushed slightly)
  • 1 tsp vanilla extract
  • Optional: purple gel food coloring (for a soft lavender hue)
  • For the Glaze (Optional):
  • 1 cup powdered sugar
  • 12 tbsp milk or lemon juice
  • 1/2 tsp dried lavender (finely crushed for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan or round cake pan.
  • In a bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Mix the milk with vanilla and lavender.
  • Add dry ingredients to wet mixture in thirds, alternating with the milk mixture. Stir just until combined.
  • If desired, add a touch of food coloring for a lavender hue.
  • Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.
  • Cool completely before adding glaze.
  • For glaze: whisk powdered sugar with milk or lemon juice until smooth. Drizzle over the cooled cake and sprinkle with crushed lavender.

Notes

  • Be sure to use culinary-grade lavender, not ornamental.
  • Pair with lemon or honey for extra depth.
  • Can be made in mini bundt molds or cupcakes for individual servings.
