Instructions

  • Place the grated zucchini in a colander, sprinkle with ½ teaspoon salt, and let it sit for 10 minutes to draw out moisture.
  • After 10 minutes, wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  • In a large bowl, combine the flour, Parmesan cheese, beaten egg, and minced garlic.
  • Add the drained zucchini to the bowl and mix until well combined. Season with salt and pepper to taste.
  • Heat olive oil in a large skillet over medium-high heat.
  • Scoop tablespoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon.
  • Fry the fritters for about 2 minutes on each side, or until golden brown and crispy.
  • Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
