Description

These Easy Shrimp Guacamole Bites are the perfect party appetizer! Juicy, taco-seasoned shrimp sit atop creamy guacamole in crispy scoop-shaped tortilla chips, creating a delicious bite-sized treat. They’re fresh, flavorful, and come together in just minutes!

Ingredients

Scale
  • 1 bag scoop-shaped tortilla chips
  • 12 oz raw, cleaned shrimp
  • 2 tsp taco seasoning
  • 16 oz guacamole
  • Optional garnish: fresh cilantro, lime wedges

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a baking sheet to prevent sticking.

  2. Season the shrimp

    • In a bowl, toss the raw shrimp with taco seasoning until evenly coated.
  3. Bake the shrimp

    • Arrange shrimp in a single layer on the baking sheet.
    • Bake for 8-10 minutes, or until pink, opaque, and slightly curled.
    • Let cool for a minute before handling.
  4. Prepare the chips

    • While the shrimp are baking, arrange scoop-shaped tortilla chips on a serving platter.
    • Fill each one with a spoonful of guacamole.
  5. Assemble the bites

    • Place one cooked shrimp on top of each guacamole-filled chip.
  6. Garnish and serve

    • Sprinkle with chopped cilantro or add a squeeze of lime juice for extra freshness.
    • Serve immediately to keep the chips crispy.

Notes

  • If using frozen shrimp, thaw them completely before seasoning and cooking.
  • For extra crispiness, air-fry the shrimp at 375°F (190°C) for 6-8 minutes instead of baking.
  • Spice it up by adding cayenne pepper to the taco seasoning or a few drops of hot sauce to the guacamole.
  • Avoid assembling too early to keep the chips from getting soggy.
