Description

Shortbread:

  • 6 tablespoons butter
  • 1 cup flour
  • 1/4 cup granulated sugar

Pie Filling:

  • 2 cups pecans (whole or chopped)
  • 1/4 cup butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar, packed
  • 1/2 cup dark corn syrup
  • 1/2 teaspoon salt

Instructions

For the Shortbread Crust:

  1. Preheat oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. Combine butter, flour, and sugar in a bowl. Mix with a pastry cutter or mixer until crumbly. If needed, add 1 tablespoon of water to help bind the mixture.
  3. Press the mixture firmly into the prepared baking pan.
  4. Bake for 10-12 minutes, until the crust looks slightly puffed and dry. Cool slightly.

For the Pecan Filling:

  1. In a medium bowl, whisk together brown sugar, corn syrup, melted butter, eggs, vanilla, and salt. Fold in the pecans.
  2. Pour the mixture over the baked crust and spread evenly.
  3. Bake for 20-25 minutes, or until the filling is set. A slight jiggle is okay; it will firm up as it cools.
  4. Cool completely before slicing. Refrigerate for cleaner edges.

Notes

  • For easier slicing, chill the bars in the refrigerator for at least 2 hours.
  • These bars can be stored in an airtight container for up to a week.
