Shortbread:
- 6 tablespoons butter
- 1 cup flour
- 1/4 cup granulated sugar
Pie Filling:
- 2 cups pecans (whole or chopped)
- 1/4 cup butter, melted
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup brown sugar, packed
- 1/2 cup dark corn syrup
- 1/2 teaspoon salt
Instructions
For the Shortbread Crust:
- Preheat oven to 350°F and line a 9×9-inch baking dish with parchment paper.
- Combine butter, flour, and sugar in a bowl. Mix with a pastry cutter or mixer until crumbly. If needed, add 1 tablespoon of water to help bind the mixture.
- Press the mixture firmly into the prepared baking pan.
- Bake for 10-12 minutes, until the crust looks slightly puffed and dry. Cool slightly.
For the Pecan Filling:
- In a medium bowl, whisk together brown sugar, corn syrup, melted butter, eggs, vanilla, and salt. Fold in the pecans.
- Pour the mixture over the baked crust and spread evenly.
- Bake for 20-25 minutes, or until the filling is set. A slight jiggle is okay; it will firm up as it cools.
- Cool completely before slicing. Refrigerate for cleaner edges.
