Description
Easy Japchae is a popular Korean stir-fried glass noodle dish made with sweet potato noodles, assorted vegetables, and a savory-sweet sauce. It’s flavorful, colorful, and perfect as a side dish or main meal.

- 200g sweet potato glass noodles (dangmyeon)
- 1 tablespoon sesame oil (for noodles)
- 2 tablespoons vegetable oil (for stir-frying)
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 100g spinach
- 100g shiitake mushrooms, sliced
- 1 egg, beaten (optional, for garnish)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon sesame oil (for sauce)
- 1 teaspoon toasted sesame seeds
- Salt and pepper to taste
Instructions
- Cook the glass noodles according to package instructions. Drain and rinse with cold water, then toss with 1 tablespoon sesame oil to prevent sticking. Set aside.
- Blanch the spinach in boiling water for 30 seconds, then rinse with cold water. Squeeze out excess water and cut into 2-inch lengths. Set aside.
- In a large pan or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add garlic and onions, stir-fry for 2 minutes.
- Add carrots, bell pepper, and mushrooms. Stir-fry until tender, about 4–5 minutes.
- Add the spinach and cooked noodles to the pan. Toss well to combine.
- In a small bowl, mix soy sauce, sugar, and 1 teaspoon sesame oil. Pour over the noodle mixture and stir well to evenly coat.
- Season with salt and pepper to taste. Sprinkle with toasted sesame seeds.
- If using egg, cook the beaten egg into a thin omelet, slice into strips, and use as garnish.
- Serve warm or at room temperature.
Notes
- You can add beef or tofu for extra protein.
- Adjust the soy sauce and sugar to your taste preference.
- Japchae tastes great warm or chilled.
