Description

Easy Japchae is a popular Korean stir-fried glass noodle dish made with sweet potato noodles, assorted vegetables, and a savory-sweet sauce. It’s flavorful, colorful, and perfect as a side dish or main meal.


Ingredients

  • 200g sweet potato glass noodles (dangmyeon)
  • 1 tablespoon sesame oil (for noodles)
  • 2 tablespoons vegetable oil (for stir-frying)
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 100g spinach
  • 100g shiitake mushrooms, sliced
  • 1 egg, beaten (optional, for garnish)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil (for sauce)
  • 1 teaspoon toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. Cook the glass noodles according to package instructions. Drain and rinse with cold water, then toss with 1 tablespoon sesame oil to prevent sticking. Set aside.
  2. Blanch the spinach in boiling water for 30 seconds, then rinse with cold water. Squeeze out excess water and cut into 2-inch lengths. Set aside.
  3. In a large pan or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add garlic and onions, stir-fry for 2 minutes.
  4. Add carrots, bell pepper, and mushrooms. Stir-fry until tender, about 4–5 minutes.
  5. Add the spinach and cooked noodles to the pan. Toss well to combine.
  6. In a small bowl, mix soy sauce, sugar, and 1 teaspoon sesame oil. Pour over the noodle mixture and stir well to evenly coat.
  7. Season with salt and pepper to taste. Sprinkle with toasted sesame seeds.
  8. If using egg, cook the beaten egg into a thin omelet, slice into strips, and use as garnish.
  9. Serve warm or at room temperature.

Notes

  • You can add beef or tofu for extra protein.
  • Adjust the soy sauce and sugar to your taste preference.
  • Japchae tastes great warm or chilled.
